No Bake Lemon Truffles. VEGAN AND NO SUGAR.

Are you craving a treat that is Vegan or free of unprocessed sugars or artificial sweeteners and do you like lemon? This is a simple and easy way to create a snack with my own variations. I used thicker coconut flakes because I couldn't find shredded, which made it more chewy. 

1 cup chopped, pitted dates.

1 cup chopped walnuts or pecans.

1 cup almond flour.

1/4 cup + 1 tsp of lemon juice.

2-3 teaspoons freshly grated lemon zest.

1 cup unsweetened shredded coconut. 


In a food processor, pulse together dates and walnuts or pecans, almond flour, lemon juice and lemon zest.

Roll mixture into 1 inch balls. Roll in coconut flakes and refrigerate until serving.
